Recipe for Toad Suck Sunshine Salad

Toad Suck Sunshine Salad is one of those classic jello salads that you see at church potlucks, office luncheons and baby showers thrown by your Great Aunts. My kids, nieces and nephews love it and insist on it for every family gathering. I got the recipe from Donna L, a friend of mine in Arkansas.

Toad Suck Sunshine Salad

Ingredients:
1 pkg lemon jello
1 c boiling water
8 oz. cream cheese, softened
1 large can crushed pineapple
1 c chopped pecans
1 lg container cool whip

Directions:
Mix jello and boiling water. Dissolve 8 oz cream cheese in hot Jell-O mixture and add crushed pineapple and chopped pecans. fold in Cool Whip. Set over night. Fluff up and dive in…

(Sometimes I toss in a few cups of mini-marshmallows for fun.)

6. Dressing, in a dish and NOT in the turkey, with onions, celery and mushrooms.

1. Black olives, the jumbo size, enough so that every child my hubby’s age and younger can stick an olive on the end of each finger and wave at me across the table.
