My First Entry in Tempt My Tummy Tuesday! Lisa asked for OUR family’s version of Tuna Salad, so here it is.
Pea Family Tuna Salad – serves 2 adults, 2 teenage boys, 1 teenage girl who likes tuna and 1 teenage girl who doesn’t
2 extra large, family size pouches of tuna, water packed
4 eggs, hard boiled and chopped
1/4 c sweet pickle relish
1/4 c finely chopped sweet onion
1/2 tsp celery seed
1/4 tsp salt
1/2 – 1 c low fat mayonaise (we use Helmans)
leaf lettuce or spinach
Mix first six ingredients together, then add mayo until the consistancy suits you and your family. Spoon on toasted whole wheat bread, top with tomato slices and greens, and serve with tomato soup. And cheetos. Thanks, Lisa!
